Fitness blog---Good lunch recipe-Chicken salad

There are several different chicken salad recipes out there, but this is a bit different and is a lunch that fills you up just enough without making you fall asleep!

Apricot Pecan Chicken Salad

Cooked, chopped white chicken (grocery stores sell this in the deli section) or use leftover rotisserie chicken
A small handful (about 8) dried apricots
A small handful of candied pecans (less is more)
a couple stalks of celery
a small spoonful of apricot preserves if you have any

Combine these ingredients in a food processor until it is the consistency you like. Then scoop out and mix in about a half cup of nonfat plain yogurt until it is moist enough for you.

eat with crackers (Ryvita, Ak-Mok or something similar) or make into a sandwich (again look for bread that is under 100 cals a piece, no enriched white flour and make sure it has a couple grams of fiber and protein.)


You can change this as desired, this is just a departure from the normal chicken salad. Using yogurt instead of mayonnaise is one of my tricks, gives some protein, no fat or creepy hydrogenated oils.

Well Ali, yogurt does have a completely different taste than mayo so I don't know if it will satisfy you if you really like the taste of mayo.
Mayo just has practically no nutritional value at all and is so gross when you think about it just being raw eggs and oil (and the other crazy chemicals are added in our store bought versions)
yogurt is going to have more of a sour cream like taste. I don't know if you have access to Fage Greek Yogurt, they are selling that in a lot of stores now and it is a very thick and creamy yogurt and is available in nonfat.
i use yogurt for making dips, tuna sandwiches, chicken salad, as sour cream etc.

I'll have to try the yogurt vs. mayonnaise thing. I've been settling for light mayo, but I think plain yogurt might satisfy my craving better. I can't enjoy a sandwich or fries (baked, of course) without at least a smidge of mayo, and light mayo just isn't very good.
