I was rolling through my cookbook today and looking at some of my favorites when I came across a "Taco Lasagna" I made a while back by layering beans, taco meat, tomatoes, olives, cheese, and rice between tortillas and baking it.

It got me to thinking about how much I loved a good casserole as a kid, and hell, still do.

i make an amazing enchilada casserole, thank you very much.
While I love casseroles I usually only make them when money is scarce and we need to have a meal last a week. Casseroles are usually quite fattening. My fav casserole is a Mexican Lasagna one that I make...soooooooo yummy!
That sounds amazing, sans the tomatoes / olives.
No one can say no to my tuna noodle casserole. I took a simple dish and added a few of my own twists. I love how easy it is and no one ever complains when I make it. Good comfort food :)
What makes a casserole? Is it anything made in a casserole dish (I loves me some Pyrex), or does it need to meet the requirements of "main course" or perhaps "all courses in one"?
Oh man let me tell you casserole is an old time favorite! Tuna is the favorite of classics but to stray from tradition you can go with a veggie dish made with red potatoes green onions sliced mushrooms guirre cheese and cream. Baked at 350 till golden brown. Yummy stuff I tell you. ;0)
See, that's why I was asking. I make a pommes Dauphine that is to die for, but I wouldn't consider it a main dish. I don't think the butter and cream and Gruyere provide enough protein to qualify. Fat, yes. But not protein. :)

some peeps are veggies you know! it was an option. There is also beef noodle , baked chicken delight, brunch egg casserole, turkey and the all mighty mac n cheese with ham!

*I'm* veggie! I would love to see some meat-free casseroles posted here, that could provide the balance of nutrients I need.

Oh, I love me some casserole! Tuna casserole is classic, and there are so many ways to change it up. That's pretty much how my mom cooked; putting some ingredients in a dish and baking it! For a busy working woman, you can't beat that. And it's better than feeding your family fast food. That taco lasagna sounds yum! I make a decent cheesy chicken casserole; rice, chicken, frozen mixed veggies, American cheese slices, and bread crumbs on top. Low-brow cuisine at its best!
WOW does that ever sound tasty! I love beans... and potatoes... and turnips... and beets... and truffles!

1. Soak haricot blanc beans overnight. Rise and boil them in salted water until soft.

2. In a pot add in haricot beans and about 2 cups of vegetable stock (Do not use canned learn to make a real stock it's eay) Bring to boil and simmer for around 30 minutes. Drain and put back into pot.

3. Sautee about 6-8 sliced portobello mushroom and 1 cup of chanterlles in butter. Season with chopped garlic and onions.

4. Saute about 1 cup of sliced carrots in butter. Season with chopped garlic and onions.

5. In a casserole dish. Layer the hariot beans on the bottom. The layer with the carrots. Finally layer with mushrooms.

6. Pour a slight amout of vegetable stock to wet the layers.

7. Cover with an thick layer of mashed potatoes. Not instant and made with butter and cream.

8. Bake until potatoes are brown.

For a more haute cuisine version.

Use mashed potatoes and turnips. Add a layer of layer of sauteed thinly sliced beets (sautee in high heat and quickly so the red doesn't leech into the dish). And garnish with sliced black tuffles.
