I came up with this one when I was pregnant with my first baby. I was having cravings for all sorts of food but this was a quick easy and cheap meal that My husband fell in love with. This is definatly not a low fat meal but it's great if you don't have much money and you need a filling meal

1 Kilbasa Sausage
3-5 potatoes (peeling is optional and amount of poatatoes is depending on how many servings you want)
1- 2 cups of shreaded Cheddar Cheese
1/2 cup milk
either 2 tbs garlic powder or 1 tbs fresh crushed garlic
1 tbs salt
1-2 tbs pepper
3 tbs water (for the sausage)
4-8 cups water (enough water to cover all the potatoes in a pot)

boil the potatoes in a large pot with 4-8 cups water till soft, test with a fork after about 30-40 min if the fork sinks in with little resistance there ready and you can remove from the heat. cut the sausage into small bit size pieces i usualy cut the whole sausage in half and then i continue to cut each piece into little circles right off the whole pieces. then put 3 tbs of water in a pan and heat the sausage till lightly browned all over in the pan on med heat, stir frequently.

While the sausage is cooking take the butter, milk, chedder cheese, garlic, salt, and pepper and mash and mix all of the items into the potatoes till thick and creamy and the cheese is melted throughout the potatoes. when the sausage is done drain the excess grease and add to the mashed potatoes.

This is one of my familys favorite meat and potatoe meals and my kids and husband love it. I hope you will enjoy it too.

English Muffin Pizzas

This is my son jakes favorite thing to make. He helps me in the kitchen as much as I will allow him in there. This is something easy that anyone can make.

2-cups shreaded mozarella
1 jar or can of pizza or spagetti sauce
one 6 pack of english muffins or bagels (store brand is the cheapest and just as good)
(pepperoni or other toppings optional)

Pre-heat oven or toaster oven at 350. Place 6 english muffins or bagels on a cookie sheet spaced slightly apart. take a spoon and spread the pizza or spagetti sauce evenly over each english muffin or bagel. Then sprinkle the mozarella cheese over each one till fully coated. Any other toppings you wish to add can be placed on the mini pizzas and then put into the oven for aproximatly 10-12 min till the cheese is lightly golden around the edges of the pizzas.

Kids love to do this recipe and it's something easy to involve them in without destroying your kitchen or taking too much of your time.

use 1 egg per pound of ground beef or turkey
1 1/2 cup of bread crumbs per pound of beef or turkey
1 pack of LIPTON Onion soup mix per every 1-3 pounds of beef or turkey.

take all of the above ingredients and mix with clean hands in a large bowl. When everything is completely mixed, take tennis ball size chunks of meat and roll into a ball then flatten.

You can cook on either a grill, frying pan, or griddle. Cook till browned and no longer pink on the inside. Put on a toasted bun and add whatever else you want.
Quick Garlic cheese bread

use any bread (french loaf, sourdough, pre-sliced white)

take 1 cup softened butter or margerine
mix in 1 1/2 tbs Oregano or italian spices,
1 tbs crushed Garlic,
1/2 cup Parmasian cheese

pre-heat oven 350
spread over one side of the bread and place on a backing sheet or foil with the buttered side facing up. Bake for 8-12 min.

What to do with Left Over Baked Chicken

1) you can always make a sandwich or
2) You can make my Favorite "Chicken Noodle Soup".

First (and I hate this) you can either skin the baked left overs before you boil it or you can strain the skin pieces out after. I do it before most of the time (lower fat).

Take the whole left over baked chicken and put it in a large pot filled with water, bring to a boil and lower heat to med. Boil the Chicken for 15-20 min. Remove the chicken from the simmering pot of chicken broth and place in either a large bowl or plate. Add diced onion, spices, celery, carrots and anny other veggies you want to the pot of simmering Chicken broth. As soon as you can, remove the pieces of chicken meat from the bones and add to the soup. cook everything all together for 15-30 min till the hardest veggies are soft enough to stab through with a fork.

You can cook noodles in with your veggies or you can do what I do and cook them seperate to keep them from getting all mushy if you have leftovers from your soup.
I do loves me a baked potato, but they taste so good I could eat four of 'em! Not a healthy decision, when topped with butter and sour cream. :)

(No, I've never eaten FOUR baked potatoes. But I'd bet I could.)

I love kielbasa, but I slice it up and bake it on a bed of pickled red cabbage and/or Bavarian-style sauerkraut. Tasty! Sigh, no more kielbasa for me since going veg... and I won't even TRY a meatless substitute. My Polish grandmother would die at the thought.
More Baked Chicken Leftovers:

My 3 yr old loves anything with cheese so I will sometimes take leftover baked chicken and pull pieces off the breast meat and put it on a flour tortilla with jack and cheddar shreded cheese then I cover it with another tortilla and cook in my large frying pan for just a few minutes till lightly browned on each side.

Cream of wheat and a loaf of bread ,,, breakfast
English Muffins can also be substituted for portobello mushrooms. It's delicious!
For all you DUTCH OVEN COOKS :

Per person:
1/2 cup water
1/4lb beef cubes
1 carrot
1 potato
Pour 1/2 cup of water into dutch oven.
Add beef cubes and cook covered for 20 to 30 minutes, stirring every few minutes.
Add rest of water and heat to boiling.
Cut carrots and potatoes into cubes and add to beef.
Add salt and pepper.
Cook for 20 minutes or until carrots and potatoes are soft.

If you do not know what a dutch oven is goggle it ...... crow
