I do full-on feasts at Easter and Thanksgiving, but for my NYE parties, I usually keep it simple. I'm not sure if it's a regional thing, but the Costco stores around here are very organic- and vegetarian-friendly, so I usually pick up a whole mess of fresh veggies and dried fruit, make a cheese tray (Costco has the BEST prices on "good" cheese!), and some vegetarian finger foods such as mini quiche and phyllo-pastry hors d'oeuvres and then just keep them rotating out of the oven during the night.

Being an early 20-something my last few New Years parties I've thrown have had little to do with solid foodstuffs. Mainly just drinkin'. I now can, however, personally attest to the quality of that 7-layer dip!
I cook more for other holidays. ie: Easter, St. Patrick's, etc...
