vegan citrus berry cupcakes (recipe/pic)

Got in a baking mood today and made these yummy cups of awesomeness. They are so delicious! Thought i'd share with you all. :) Enjoy! (the recipe follows)

for the cupcake part:

* 1 1/3 cups all-purpose flour
* 1/2 teaspoon baking powder
* 3/4 teaspoon baking soda
* 1/4 teaspoon salt
* 1/4 cup canola oil
* 2/3 cup sugar, plus
* 2 tablespoons sugar
* 1 cup rice milk
* 1 teaspoon vanilla extract
* 1/4 cup lemon juice
* 1 tablespoon lemon zest
at 350 for about 12-15 minutes

for the frosting:
3 c unbleached organic sugar
1/2 c margarine
, softened (80% fat is best)
1/4 c soy milk (don't add all of this, just mix everything else together and add as needed)
1 1/2 t vanilla
1/4 c mashed Raspberries (or 1 tbs of raspberry preserves)

for the topping, just use fresh raspberries or strawberries and sprinkle with lemon zest

Yummy! Thanks for sharing the recipe..I'm gonna bake a vegan chocolate pie today. It's a gift for someone so it better turn out well! It usually does..I'll share a vegan recipe on here soon. I'll try this next weekend! : )

i actually have a recipe for a raw vegan chocolate pudding pie (you use avocado for the pudding part, crazy, i know) i'd be more than happy to share it with you :)

can't wait to see what recipe your share, i'm always on the search for recipes i have yet to try.
