Cherry Coke Cupcakes

[Roxy Tart {PL Team / Comm. Mgr}]

-1 jar maraschino cherries, drained, liquid reserved

-1 box devil's food cake mix

-1 cup cherry coke

-3/4 cup vegetable oil

-3 eggs

-1 container whipped vanilla frosting

Heat oven to 350, line pan w/ baking cups

Chop Cherries

In large bowl beat cake mix, coke, oil, eggs, and 1/4 cup cherry liquid. Stir in chopped cherries.

Pour into cups

Bake 20 mins or until toothpick inserted comes out clean.

Cool completely.

In small bowl mix frosting and all remaining cherry juice.

Frost cupcakes and top with cherries if desired.

These are a Diabetic Friendly version for my MiL (who is a Diabetic) I used Diet Cherry Coke and reduced sugar Vanilla Frosting. Yummers! They were soooo GOOD!
