5 cups orange juice
5 cups sugar
5 cups oranges sliced thin
5 cups water
boil all the ingredients for about 5 hours until reduced to about half and its thickened and add a pack of fruit pectin if you want to make it last, it will go with about anything from toast to tofu one if my favorite things to do is mix 3 tbs marmalade with a dash of fresh ginger and a ts soy sauce and coat some steamed chicken and broccoli for a quick stir fry

Pork Chops with Mustard & Marmalade

5 oz lean boneless pork chops
2 tbs chopped onion
1 clove minced garlic
1/2 cup water
1 tsp reduced sodium soy sauce
1/4 cup chopped bell peppers
1 tbs catsup
1 tbs orange marmalade
1 tsp spicy brown mustard
1/2 tsp sesame oil
1. Preheat broiler. Spray rack w/cooking spray. Broil chops 4" from heat until rare. (about 2 min per side)
2. Heat oil in frying pan. add onions, garlic, peppers. Saute until onion is translucent. Add water, soy sauce, catsup, marmalade, mustard and sesame oil. Bring to a simmer and stir until smooth.
3. Add pork chops and cover with sauce. Cover and simmer for 5 min. Check often & add water if necessary to prevent burning.
