If you are just riding around town (ie mostly flat roads) you can get away with a single speed if you are comfortable standing up on the pedals to get up speed. BUT why not get both!
A friend of mine has an older Felt Red Baron cruiser bike, so I just looked at their website..

I really dig the Hot Wheels Sixty-8 one! I just bought a super badass mt bike that I never get time to ride, so probably shouldnt buy another one... I should just build my own bike anyway.
They also have 7 speeds, but you dont need that unless you are planning on riding a lot including big hills.
Find a local bike shop and go take one for a ride. Make sure you are comfortable on it.
