Once upon a time I was a soda jerk at an extremely retro eatery and had to make a variety of drinks, so I thought I share some formulations with everyone. I say "formulations" because we didnt use standard forms of recipe measurmets.
To make these you will need to stock up on sno-cone flavorings, (prefferably in flavors you know you'll like- dill pickle is just plain weird, but they make it.) Get the concentrate ones that are added to simple syrup as these formulations are not for flavorings that already have the simple syrup, though I'm sure the can be tweaked for that).
Making simple syrup is easy- 1 part water to 1 part sugar. Make certain ALL the sugar melts, it helps to use hot or boiling water and let it cool and use it later. There is no need to refridgerate simple syrup.
It also helps to have soda water and non-dairy creamer handy. Dairy creamer does not react well with soda water.
When I refer to "filling the glass" the glass in quesion is one of those classic coke glasses you see at diners with the wide top and narrow bottom, they are easy to find and since each drink was normally measured into the cup, it would help to start your mixing with one of these.
Sorry for the long winded intro!

Italian Soda:
Fill a glass three fingers high (so about 1 cup) simple syrup.
1 teaspoon your sno-cone flavoring of choice. Stir it up!
Add a scoop of ice and fill with soda water OR fill nearly full with soda water leaving room for a little ice. You don't want the overkill-ice that fast food places use to give you way less soda then the cup size would suggest. Just eough to make the drink chilled. Come to think of it- you could just shake the ingredients in a cocktail shaker with ice and then pour them into nice glasses if you want to be fancy. (A little booze livens any of these drinks up too!)

French Soda:
Start making the italian soda, after the simple syrup and flavoring are in, add about another three fingers of creamer, then add soda water and ice. Stir!

Eggcream:
A french soda without ice. Stir!
Good egg cream flavors are vanilla, chocolate, coconut and my favorite- white chocolate macadamia nut- yes there is white chocolate macadamia nut sno-cone favoring out there! Eggcreams do not (in my opinion) go well with fruit flavorings. Although, a cherry vanilla eggcream sounds tasty!

Phosphate:
An italian soda with 3-5 splashes of citric acid, best with fruit flavors as the citric acid makes the soda very tart. As always- stir it.

Lets say you want a Cherry Lime or Strawberry Kiwi soda, well the cherry/strawberry flavoring is red and the lime/kiwi flavoring is green so be prepared for a brown, coke looking drink- it still tastes good.
use the standard "three fingers" of syrup and a teaspoon each of the flavors you want, no need to add more syrup. For Chocolate sodas/egg creams- use chocolate syrup "three fingers" high.

When mixing with any pre-made soda such as coke or sprite you use "one finger" high of simple syrup and one teaspoon of flavoring
Cherry coke is only "one finger" of syrup and a teaspoon of flavoring beause the coke already has plenty of syrup in it, same with a Shirley Temple- cherry flavoring and sprite/7up/sierra mist
You can also mix appropriate amounts of flavoring concentrate with simple syrup to make pre-mixed syrup flavors that you love and will use frequently, like cherry or vanilla. Pretty much everything is "mix-to-taste" and experementing with it is fun.
Vanilla is easy because you need only buy vanilla extract and then you can make an excellent vanilla cream soda- "three finers " of syrup, a teaspoon of vanilla extract and soda water and ice.

Questions? Any other former or current soda jerks out there with recipes or perhaps better measurments?

these sound great!! thanks for sharing!! =)
my wife got me a fun gadget called a sodastream for christmas and it makes soda
http://www.sodastreamusa.com/

they have a bunch of diet flavors and as a type 2 diabetic I kinda need that
a 16.9oz container makes 12 liters of soda
recently I've been taking crystal light type mixes that make 1 gallon, dumping it into a container and adding 16.9oz of water to make a simple pre-flavored syrup

I can combo flavors to make cherry lime rickey and other flavors ;)

now I'm gonna try to use splenda instead of sugar and use the recipes here.

still looking for a good cream soda recipe tho

John
Looks like fun gadget, let me know if the Splenda works! It may be possible to make the simple syrup with agave nectar, though don't know the ratios a it is already a syrup. There were two kinds of cream soda where I worked. One was as I said - just a vanilla soda and it tasted just like A&W's. The other was with the "cream soda" flavoring and it was red. This was like the soda "big red"- tasted like it too!

I've had the big red.. I'll pass
more like A&W or Stewarts or the big daddy of em all... IBC

used to love IBC when sugar was on my diet ;)
2 cups of splenda
1 cup of water
2 tablespoons of vanilla

and I have some kick ass cream soda

the splenda based simple syrup is kinda thin in consistency but tastes just fine

John
Thanks, homey, now I HELLA want one! Wonder if Roxy will let me keep it in her kitchen...
