Taken from the book "Pad Parties: The Guide to Ultra Entertaining" by Matt Maranian. An Excellent book! We made these the other night and they are amazing and SO easy! The book called them "the aphrodisiac if party food" and they are great to keep around just to snack on.
You Will Need:
1/2 stick of butter (4 tablespoons) @ room temperature
1 3/4 cup chunky, salted peanut butter
1 cup confectioners sugar
1 1/2 cups Rice Krispies (we used Cocoa Krispies- yum!)
One 12 ounce package of semi-sweet chocolate chips
1/3 bar paraffin
A note: Paraffin is carried in most baking sections of grocery store (Parowax was the brand at ours). This is the same paraffin used on skis, surfbaords, and squeaky cabinets. It is sold in 16 ounce packages containing 4, 4 ounce bars. You will need 1/3 of one 4oz bar. Paraffin is commonly used in candy making. It gives the finnished product a professional sheen and keeps the chocolate from softening too quickly at room temperature. It is not necessary to use it, but it produces the best results and makes dipping a whole lot easier.
In a large bowl combine the butter, peanut butter, confectioners sugar, and Rice Krispies, hand kneading until blended. Refridgerate until firm. Work the mixture ito compact 1 inch balls and place on a tray lined with wax paper and place back into the fridge.
In a non stick skillet, melt the paraffin over VERY low heat, stirring with a wooded spoon. Once liquified, add the chocolate chips, keeping the heat very low and stiring constantly. Once the chips are melted, turn off the burner.
Using the wooden spoon, roll each peanut butter ball in the chocolate, coating it completly, then place on the tray lined with wax paper. (I used a tooth pick to fish them out of the chocolate) Addtitional chocolate can be drizzled over them for a more decorative presentation. Refridgerate until hard.
