I'm a "flexitarian," which, for me, means that I only eat meat from animals that have lived natural lives: no factory farming, no feedlots, etc. As a result of my personal standards, I am pretty much a vegetarian.
I never ate bacon every day. When I was brunching regularly with friends, I'd maybe have it once a week. With a touch of maple syrup, please. But now that I can't have it at all, I crave it! My boy bought me a bacon-scented air freshener for my car (I refuse to take it out of the plastic wrapper) and we shared a Mo's Bacon Bar* from Vosges as a rare treat. I even found a recipe online for candied bacon, which I want to make when I find some happy-pig bacon! My favorite bacon, hands down, was Nueske's from Wisconsin. Lucky for me, I haven't been in Wisconsin since I went veggie, so I haven't been tempted. :)

What's your bacon story? Poppy? The floor is yours. :)


*That's Mo as in Mo Frechette from Zingerman's in Ann Arbor, MI... and the bacon is Nueske's!

Even I have to draw the line somewhere: bacon "cereal".

A-haaaaaaa. That I can do. Maybe add a little cayenne to the frying process? I especially appreciate your taking our health into consideration and using canola. See, what I usually do is use the remaining bacon fat to make the dressing. Never even crossed my mind to substitute ;D (Great dressing: bacon fat & bits from the pan - cooked with garlic and cayenne-, red pepper jelly, rice wine vinegar. Heat gently to combine. Savour!)

Here's one to roll around in your mouth for half an hour, enjoying the sensation of the syllables as they gently caress your palate, palms sweating and hands trembling ever-so-slightly as you imagine conveying the delectable delight into your gaping maw:

Beer Cheese Cupcakes with Bacon Cheddar Cream Cheese Frosting

I personally would substitute maple for the cheddar in the frosting, but I was raised by... Europeans. ;D

Chopped bacon and blue cheese dressing. Sort of bland.

Here's my recipe.

Fry 2 pounds of bacon well.

Drain half the fat from pan.

In remaining fat lightly sautee 4 cloves of garlic.

Drain garlic, pat dry and chop coarsely.

In a large mixing bowl whip 1 med egg yolk while pouring in 1 cups of canola oil.

(Use canola oil because it's low in unsaturated fats and healthier for you - hahahhaaaaaaaaaaaaaaa.)

Fold in the bacon and the garlic.

Flavor with coarsely ground pepper and perhaps lemon juice.

Guess what you've just made? Bacon Aioli.

Serve it warm as a topping for french fries or on bread or just eat it with a spoon.

They are tasty, but Bacos contain partially hydrogenated oil. I'd rather eat meat.

The only occasion I ever ingest tofu is when I use the magical transformative powers of cacao to convert it into Chocolate Silk Pie. Can't taste one teeny tiny bit of soy evil in it!

Bacos is not bacon. It contains no bacon or any thing even resembling meat. It's made of the same stuff as tofu. If I wanted to eat tofu i'd eat tofu.

MacDonalds, here in Scotland. Have just started doing a thing called a "Big Tasty" with Bacon. Absolutely delicious. I was starting to take my kids to MacD's more than the once a week treat as an excuse to munch a big tasty or two. I went for my annual check up at the Doctors today. My Cholestrial is way too high apparently. No more big tasties with Bacon for me then. This will be like Homer abstaining from doughnuts. Not easy!

HA HA HAAAAA!!! My highly scientific calculations declare it to be fetish, but of the amateur variety. :D

That Bacon Explosion, however, food porn elevated to pure art. I swear I heard angels when the browser window opened and a little ray of light shone down on my computer, and lo, I heard a voice commanding me to do decidedly un-kosher things. Unclean thought unclean thoughts unclean thoughts. Come to Mama and cholesterol be damned!
