Cherry Coke Cupcakes

[Roxy Tart {PL Team / Comm. Mgr}]

-1 jar maraschino cherries, drained, liquid reserved

-1 box devil's food cake mix

-1 cup cherry coke

-3/4 cup vegetable oil

-3 eggs

-1 container whipped vanilla frosting

Heat oven to 350, line pan w/ baking cups

Chop Cherries

In large bowl beat cake mix, coke, oil, eggs, and 1/4 cup cherry liquid. Stir in chopped cherries.

Pour into cups

Bake 20 mins or until toothpick inserted comes out clean.

Cool completely.

In small bowl mix frosting and all remaining cherry juice.

Frost cupcakes and top with cherries if desired.

So I'm thinking of making these for Easter dessert! How many did this recipe make, Roxy? Wondering if I'll need to double it, etc. :)

Eek, it made 24!! I made 2 batches and ended up with 48 cupcakes XDDD After making the first batch and having 24 cupcakes, I was going to stop, but I was experimenting with white cake instead of devil's food for the second batch, so I still wanted to make the second batch. They were so yummy!! My family seems to enjoy them as well, pictures soon!
