i made these tonight, and thought i'd share with you all (recipe follows)-Rebekah
vegan chocolate cupcakes with genache and fresh raspberries:cake part:
# 1 cup soy milk or rice milk
# 1 teaspoon apple cider vinegar
# 3/4 cup granulated sugar
# 1/3 cup canola oil
# 1 teaspoon vanilla extract
# 1/2 teaspoon almond extract, chocolate extract, or more vanilla extract
# 1 cup all-purpose flour
# 1/3 cup cocoa powder, Dutch-processed or regular
# 3/4 teaspoon baking soda
# 1/2 teaspoon baking powder
# 1/4 teaspoon salt
i usually heat the oven to 425 and just watch them like crazy, they
should be done around 15 minutes or less depending on your oven, so for
the first time you make them, watch them, that way you know how long to
do it next time
genache part:
1 cup of cream (cashew creamer or soy creamer or just normal dairy cream)
9 oz. of vegan dark chocolate (or reg. chocolate)
bring
the cream to a gentle boil and remove immediately and with the
chocolate in a seperate heat stable bowl (glass bowl works fine), poor
the cream over the chocolate and slowly stir until evenly incorporated
and melted
once the cupcakes are cool (this is important!)
just turn the cakes upside down and dip them into the genache until a thin later coats the top and just top it off with whatever topping you
want, like strawberry, raspberry, blueberry, mocha bean, whatever you
want :)
