I just had a valve replacement surgery and as a result had a drastic change in diet due to the coumadin. I am semi-vegetarian. any advice?

No heart issues here, but wow, I hope you're healing well and doing alright. I'm a flexetarian, what type of advice were you looking for?
I was vegetarian til the heart issues came. I had a stroke due to an abnormal heart which led to the open heart surgery. Since the surgery, they had to put me on coumadin, which mean very limited vitamin K (all medium and dark green vegetables). If i do eat any, its at least enough for four bites. Trying to create a menu throughout the week is difficult. I have to keep a heart healthy diet, so trying to come up with a menu where i dont compromise too much on the medication.

I have a bad valve, not bad enough for surgery (ever I hope) please explain a little more, did they ask you to change your diet? I would think a semi vegetarian diet would be pretty healthy already?

Wow just read a little more, does that mean they asked you to eat less veggies? I eat none.
I guess i did leave something else out, when i had the stroke it was found that i was anemic. I had to have blood transfusion. I was already taking iron pills and eating a lot of spinach and black beans. Im glad I can have some green veggies (asparagus and green beans)...its hard to find other veggies outside of carrots, corn, cauliflower, and green beans in the freezer section. Other than soups and salads, its hard to find a simple recipe that will last longer than 2 days in the fridge. Before i got sick, i usually ate two sides. Changing things up is kinda annoying at times.

I start cardio rehab this week and I think they said they are going to have nutrition classes, so that is a good thing. Im looking online at vegweb and cooking light to see what else i can find outside of past
